Firecracker Chicken Breast from Panda Express

Since we discovered that the firecracker chicken breast was free at Panda Express for Chinese New Year on Jan. 31, we decided to get some that day. The chicken was in a black bean sauce which was just a little spicy from the chilies, but unfortunately, it tasted a little bland. It just tasted like chicken sitting in some sauce with onion, chilies, and bell peppers. The chicken was also pretty dry... I ended up drinking a lot of water due to the dryness of the chicken rather than the heat from the chilies. The best part of the chicken dish was the bell peppers. I probably wouldn't get these again, so it was a good thing we got it for free!

I decided to try the frozen Foster Farms Tequila Lime Chicken Wings from Costco as a quick, microwavable food to have on hand. They were pretty easy to warm up - the directions state to microwave 8 wings on high for 7-9 minutes from frozen (basically 1 minute per chicken wing), so I microwaved 6 wings for 6 minutes.

The Tequila Lime Chicken Wings tasted pretty good. They had a faint citrus lime taste, but the dominant flavor is a savory, almost peppery taste. I have never had tequila, but maybe the pepper taste is from the tequila? The chicken wings were also a little bit sticky from the glaze, but not super sticky like honey BBQ wings, and they also weren't super saucy like buffalo wings.

Overall, it's a nicely balanced chicken snack.

Isabella's Kitchen Chicken Enchilada Bake

My boyfriend got some of the Isabella's Chicken Enchilada Bake from Costco. I don't like chicken enchilada bakes (or chicken enchiladas), so it isn't something I would buy on my own. While it is microwavable, we cooked it in a conventional oven following the instructions on the back of the box.

The chicken enchilada bake was fairly rich and cheesy with a little adobo sauce. I don't like beans, so one good thing about this chicken enchilada bake was that it didn't have any beans. It also wasn't spicy at all. Overall, it was OK, but the cheese had a little too much of a sour taste for me. It also gave me a bit of a headache after eating it (probably from the oils).
